Pizza with caramelized onions, pear, italian sausage and sage




Yum, yum! The salt and spice of the italian sausage combines with the sweetness of the pear, caramelized onion and sage to create a hearty, delicious pizza!

Pre-heat oven to 500F.

Flour
Onions
Italian sausage
Sage
Pears
Olive oil
Salt
Buffalo mozzarella
Corn meal
Pizza peel
Metal pizza tray/sheet or stone

Follow the crust instructions from this pizza post. Put corn meal on pizza peel below raw crust to make it easy to slide the pizza into the oven. Keep pizza tray or stone in oven while it pre-heats.

Caramelize the onions in olive oil (about 10-15 minutes on medium heat), add sausage and sautee until completely cooked, sautee the pears in the sausage pan for ~3-4 minutes or until moderately soft and heated all the way through. 

Place olive oil on the pizza crust, then place all ingredients on the pizza, ending with the buffalo mozzarella (dry with paper towel before placing on pizza).This pizza doesn't have sauce!

For an extra delicious kick, add roasted garlic and mozzarella cheese to the crust! You can roast garlic in the microwave by poking holes in the cloves with a fork, covering in olive oil and cooking on medium heat for ~30 seconds (maybe more, depending on how much garlic, but beware - if you have not properly poked your holes the garlic can explode!).

Vegetable Fusilli with Lemon Ricotta Cream Sauce

A rich variation of pasta primavera, this vegetable pasta features a sweet and tangy ricotta addition to our standard version with vegetables and olive oil. It tastes delicious but comes across heavier (and more caloric) than the standard, so we recommend saving this for a comfort food occasion.


Prep time: 15 mins
Cook time: 15 mins (can be done simultaneously)
Serves: 2-3.

Ingredients:
Pasta (fusilli or similar), 1 cup per person
1 cup ricotta
2 cups spinach (fresh, cooks down to much smaller)
10-20 cherry/grape tomatoes
1 cup artichokes in brine or grilled/marinated
1 zucchini, chopped into medium pieces
1 yellow squash, chopped into medium pieces
1 lemon
olive oil
garlic to taste (freeze dried or 1-2 cloves fresh and finely chopped)
salt & pepper to taste

Cooking Instructions:

  1. Put pasta into boiling water following instructions on package.
  2. Saute zucchini & squash in olive oil on med-high heat until slightly browned (5-7 mins). Add garlic, salt & pepper and brown for 2 more minutes. Remove and place in serving bowl.
  3. Add a pinch more olive oil to pan. Wilt spinach in same hot pan. Saute until barely wilted and add to same serving bowl.
  4. Drop tomatoes into hot pan, sprinkle salt and saute for 1-2 mins until lightly heated. Add to same serving bowl.
  5. Slice artichokes into quarters and add to serving bowl. If artichokes are cold, follow instructions for tomatoes to warm them before putting them in the bowl.
  6. Sprinkle juice from 1/4 of the lemon onto veggies and cover.
  7. Mix ricotta, lemon from the remaining 3/4 of the lemon, salt, pepper, and a tablespoon of olive oil. 
  8. Drain pasta when finished. In the warm pan, add the ricotta mixture and stir until mixed.
  9. Add pasta/ricotta mixture to vegetable serving bowl. Combine until lightly mixed.
  10. Serve!

To make our original version of pasta primavera that is delicious, fresh and significantly less caloric, do instructions 1-6 and then add the finished pasta, mix and serve. This is a high veggie content, easy, standard recipe that we eat at least once a week.

Moroccan Chicken Tagine with preserved lemon and olives


Today's recipe: 
A flavorful, tangy, yet mildly spicy traditional Moroccan dish that is super easy to make and yet impressive in its complexity.



Ingredients:
2 sweet onions, chopped
1 preserved lemon (available jarred at high end groceries, like here).
4 chicken thighs or equivalent (boneless, skinless thighs are easy and tasty)
1 cup olives -> kalamata + castelvetrano or ceringnola
1 teaspoon turmeric
1 teaspoon cumin powder
1 cup water
olive oil for simmering
pepper to taste
2 cinnamon sticks
10 whole cloves
**note that the preserved lemons and olives are both extremely salty, additional salt is not necessary.

Cooking Instructions:
Prep time: 15 mins
Inactive simmer time: 1-2 hours

  1. Heat olive oil in a large, deep-ish pan. 
  2. Place chicken and onions in the pan on medium-high heat. 
  3. Slice the preserved lemons and add to pan along with olives, spices, and water. 
  4. Lower heat to low, cover, and simmer at least 1 hour, stirring occasionally. 
  5. The longer the simmer, the more infused the flavors will be, but be careful to keep heat on low and to check to make sure it isn't getting too dry and that the bottom isn't burning. Add a small amount of water if it gets too dry. 
  6. Turn off heat, serve in tagine with couscous

Couscous:

Ingredients:
Couscous (I use israeli pearl couscous from Trader Joe's)
Honey
Dried fruits (raisins, cherries, apricots, etc.)
Ground cinnamon, cloves, ginger to taste
Thin sliced almonds (available packaged at Trader Joe's)

Cooking Instructions:
Follow couscous package instructions + include dried fruits when water is added to couscous.
When almost cooked, add honey, almonds & spices. 
Serve in tagine under lemon chicken tagine.

Delicious Vegetarian Tagine with Couscous

Here is an easy, delicious, healthy, hearty, spicy vegetarian recipe that I made up last night using stuff that I had sitting around. 

You will need about 45 minutes total, but most of that isn't active time, it's simmer time.




Tagine:

Ingredients (serves 2):
1 sweet onion
1 shallot
1 tablespoon of olive oil (any oil or butter will do)
1 can garbanzo beans (chickpeas)
1 jar or roasted red peppers (I used the one from Trader Joe's)
Half a jar of artichokes in brine (don't use the marinated ones, they bring too strong a vinegar flavor. If you can't get them in brine, just skip them).
2 cloves of fresh garlic
1 tablespoon of garam masala spice mix (you can experiment with different spice mixes - this one is technically Indian versus Moroccan, but they're similar and you can use whichever "masala" you want).
3 medjool dates
Half a jar of giant white beans (I used the ones in greek-style tomato sauce from Trader Joe's)
A pinch of powdered cinnamon, cardamom, cloves and ginger (there are already some of these in the garam masala, but these give it a warmer flavor)
Salt and pepper to taste

Instructions:
In a pan on the stove, chop and sautee the onion and shallot in olive oil until golden brown.
On medium heat, add the can of garbanzo beans with a little bit of the liquid. Disgard the rest of the liquid.
Thinly slice the roasted red peppers, cut the artichokes into quarters, finely chop the garlic and dates, and add to the mixture, stirring occasionally.
Lower temperature to low and add the garam masala powder, stir in and let simmer for 5-10 minutes.
Stir in the rest of the spices and salt and pepper and simmer.
Mixture can simmer for a long time - the longer the better.
10 minutes before you plan to eat add the white beans. Mix in and let simmer.





Couscous:
Ingredients:
1 box of israeli couscous
1 splash of olive oil
1 tablespoon honey
handful of dried cherries and golden raisins
cinnamon, cardamom, cloves, ginger (powdered, use more or less depending on how much spice you like)
salt and pepper to taste

Instructions:
About 15 minutes before you plan to eat, heat the olive oil in a pan and put water in a separate pan or water boiler to boil.
Brown the dry israeli couscous. When it is golden brown, add boiling water in proportions indicated on the israeli couscous packaging. Cover and let simmer on low for 8-12 minutes.
When the couscous has absorbed most of the water, add honey, spices, fruits, and salt and pepper. Mix and let sit covered for a few minutes.

Serve tajine and couscous side-by-side, preferably in a covered ceramic pot or actual tajine.

How to make a Dutch Baby


For the last several years we've eaten Dutch Babies (or "puffed eggs," to sound less morbid) almost every weekend breakfast. Eric has been so scientific that he has 15 versions of the recipe carefully documented to achieve the optimal custard/crispy/fluffy combination.

These are super easy and quick to make (they take a total of about 20 minutes including cooking time) and are great for breakfast, brunch and dessert.

The Perfect Margherita Pizza Napoletana at Home

What is a Pizza Napoletana?
Despite its name, it's not made out of chocolate, vanilla and strawberry.
Neopolitan ice cream and neopolitan pizza are both named in honor of the food expertise of residents of Naples, but that's about the extent of their similarity.

For those who have been lucky enough to taste an authentic neopolitan pizza (pizza napoletano), they know that it is only a distant relative of standard American delivery pizzas. It is an authentic italian evolution of pizza, that is so coveted a tradition that it is regulated by an international association. Its final state is that of a naturally sweet (buffalo mozzerella), fresh (basil, tomato, olive oil) flavor with crispy naturally sweet crust topped off with a visual presentation reflecting the colors of the Italian flag.

There are a few variations of the classic pizza napoletana, our favorite is the classic margherita. At first glance, this recipe may be mistaken for "plain cheese" as its name is commonly misused in pizza restaurants across America - in reality, margherita is anything but plain - it is the ultimate test of pure excellence in ingredients and execution.

Cominciamo (let's begin):
To start in line with Italian tradition, choose the best ingredients you can find - they should be aromatic, flavorful and fresh. If you don't want to eat it in a salad, don't put it on your pizza. Margherita means a bread-flour crust topped with the highest quality tomatoes, buffalo mozzarella, a dusting of olive oil, fresh basil and a sprinkling of salt. The quality of these ingredients is the first key to success.

Baking your pizza in the hottest oven that you can find is another key to success. At home, setting your oven to 550 degrees (or as high as the dial will go) is often the best you can do, and that is adequate for this homemade version. Some people go to the length of building a brick pizza oven in their yard, which you can do if you have the time and the space, but for city-folk it isn't necessary to make a separate oven to create a neopolitan pizza that is pretty damn good.

Step One:
Pre-heat oven to as high as it will go (ours goes to 550F).

Step Two (Most of the effort):
Pizza Crust:

  1. Start with the water, then add flour to get it to the right consistency.
  2. Start with 1 cup of tap water. Heat in microwave for about 50 seconds (microwave times vary) to get to about 120F. 
  3. Put hot water in mixing bowl and add 1 table spoon of sugar and 1/2 tablespoon of instant yeast. Mix for about a minute to dissolve sugar.
  4. Add a 1.5 cups bread flour (you want bread flour because it is better at forming gluten, which makes your dough chewy instead of cakey), 1 teaspoon of kosher salt and 1 teaspoon of olive oil.
  5. Mix with a mixing attachment (if you have a kitchenaid) for 3 minutes on the lowest setting. It will still be goopy.
  6. Kneading: Add 3/4 cup additional flour and switch to the dough hook attachment (kitchenaid) and mix for 5 minutes on a medium setting.
  7. Let rest for 5 minutes.
  8. Knead again for another 5 minutes with dough hook.
  9. Let rest at least 10 minutes (10-40 minutes- the longer it rests the more it relaxes) before getting ready to roll it out.
  10. Knead by hand for a while. Form into a round ball by pushing the bottom up from underneath. Let sit for 30 minutes.
  11. Flatten dough ball into a circle and stretch while rotating (see picture series). 
  12. Toss dough (see pictures).
  13. Place on steel mesh pizza grate (see picture), you can also use a pizza stone, but the grate will allow crispier dough cooking from underneath.
  14. Fold and unfold for ease of use (see pictures). Fold around the edge to create a slight crust uplift.
  15. Lightly salt and spray olive oil on outer crust. It is now ready to decorate!














Step Three:
Toppings:
Use a subtle tomato sauce or make your own (using one with artichokes in it is particularly good because the artichokes will increase the natural sweetness. Note that this is NOT a traditional neopolitan ingredient). Spread sauce lightly on dough - too much sauce will make it soggy.

Cut the mozzerella di bufala de campagna (available at whole foods, trader joes, Molly stones and other higher end grocery stores) into pieces that are about 1inch x 1 inch. Spread evenly across the pizza - this is the only cheese that will go on the pizza! Add fresh leaves of basil in open gaps between the cheese. Sprinkle olive oil across the top.

Step Four:
Cook at 550F for 5-6 minutes (550 is very HOT!), shorter if your oven is hotter.









Eggs Benedict with Artichoke Olive Tapenade and Tomatoes Provencales

Articholive Benedictissimo

This is a variation on the eggs benedict concept with a southern european twist.

Levain
Good olive oil
One egg per benedict
Canned, peeled whole tomatoes
Garlic (fresh or frozen)
Basil (fresh or frozen)
Freeze dried onion (light-house brand is what I used - small flakes of freeze dried red onion)
Salt & pepper
Bacon (one slice per benedict)
Shredded parmesan or pecorino romano

Prep easy-at-home tomatoes provencales:
Mix the canned whole tomatoes and their juice in a bowl with 2 cloves of fresh crushed or squares of frozen crushed garlic, finely chopped basil, and salt & pepper. Let sit for a few minutes. Slice the tomatoes in half, still in the mixture. Microwave for 45 seconds (just to get it slightly warm).

Prep boiled water for poaching eggs.

Grill slices of levain in olive oil (one per benedict). Spread the articholive tapenade (see previous entry) on the levain. Place half a tomato on top of each, making sure it isn't too wet (you don't want to make it soggy). 

Sprinkle on a fine layer of grated parmesan on top of each.

Cook bacon - one slice per benedict. Cut in half and place on top of each benedict. 

Poach the eggs (one per benedict), making sure that they are cooked enough that they aren't runny. Remove from boiling water and let water drip away (using a large spoon with holes in the bottom is useful), and place directly on top of bacon. 

Serve immediately. 

You'll have a lot of tomatoes provencales leftover. Stay tuned for other uses!
